  • Red White and Blue Quinoa Salad


    Tomorrow is day of fun, food, and family. The big emphasis on July 4th seems to be the food. There are cookouts everywhere and all sorts of delicious sides to partake in. Today I thought I would share a healthy and delicious recipe you could bring to your cookout this year.

    This recipe is a little heavier on the carbs, but every one of them are carbs that are better and slower digesting for your body. Quinoa also does a great job at keeping you feeling full! This is a salad that you can snack on without feeling guilty and that many others will enjoy as well.


    Red White and Blue Quinoa Salad

    Ingredients:
    1 cup cooked quinoa (1/2 cup uncooked)
    1 cup fresh blueberries
    8 ounces fresh strawberries, diced

    Dressing:
    2 ounces extra virgin olive oil
    2 tablespoons rice vinegar
    Juice of a medium orange (3 tablespoons)
    3 tablespoons lime juice
    2 teaspoons Dijon mustard
    1 tablespoon raw honey

    Directions:
    1. Cook the quinoa according to the directions on the package. Transfer to mixing bowl.
    2. To the bowl, add blueberries and strawberries. Set aside
    3. To a small bowl or in a blender, add oil, vinegar, orange and lie juices, honey and mustard. Whisk or blend until combined.
    4. Pour over quinoa and fruit and toss until combined.



    The great thing about this salad is that it is light and delicious. It is sweet but also great to pair along with a good hamburger or hot dog. Sometimes it is necessary to bring the healthy items to your cookout. Try this tomorrow and I promise you will love it!
